The subject of this week's email may sound like the title of a delightful fairy tale, and in many ways, it is.

Bell & Goose Cheese Co. is a woman-owned business in the great state of New Hampshire. This week got to visit them, see the farm and eat cheese to our hearts content. Which is heaven on Earth, as far as we are concerned. Anna and her family are doing it right. We are in love with the product and the mission:

"We have a passion for supporting dairy farmers and the large swaths of land they care for. Eating hand made, small batch cheese is pretty delightful but when it's local you can savor the good it's doing as well. When we buy local dairy we preserve our agricultural landscape as well as the knowledge and way of life these multi generational farms have to offer us."

The cheese we have is their Hunca Munca, a pasteurized baby Swiss. It melts beautifully, goes great on salads with apples and is great for snacking while you roast up Tad's chicken.

RECIPES
What choo gonna do with that Chicken?? Christine wants to propose a Southern Special. Chicken, biscuits and gravy and we threw in a few greens for good measure.

Skillet Fried Chicken: Bon Appetit claims that this is the only recipe you will ever need. They may not be wrong. Our only addendum is that this recipe comes to perfection when it is made with a cold beer in the chef's hand.

Southern Fried Tofu: "What about us??" cry the vegetarians. Oh, we got you.

I love you more than Biscuits and Gravy:  Is there anything better than a fresh buttery biscuit? We think not. Bake em up at home and watch everyone fall in love. Sure it has nothing to do with what's in this week's share. We just think you need this.

Southern Sweet Potatoes:  This recipe calls for 6 large sweeties which is a LOT. I am going to add about 2/3 of the recipe ingredients to match a smaller serving of potatoes. 

Radicchio and Frisee Salad: If you don't have radicchio from the Double Shares, a thinly sliced apple and some nuts would go nicely here.
